Niki Segnit‘s The Flavour Thesaurus is the first book to examine the coupling of flavours. From goat’s cheese and beetroot, to black-pudding and chocolate, this award-winning book covers classic, contemporary and ‘interesting’ flavour pairings – following the form of Roget’s Thesaurus.

A compendium of short and pithy stories, the Thesaurus is not only a highly useful reference book, it’s also likely to keep you up at night reading.

In this recording, Segnit reads extracts, discusses flavour pairings (with tastings) and tells about the idea behind the book.
